The peach, Prunus persica, is a deciduous tree, native to North-West China, in the region between the Trim basin and the north slopes of the Kunlun Shan Mountains, where it was first domesticated and cultivated. It bears an edible juicy fruit also called a peach. The species name persica refers to its widespread cultivation in Persia, whence it was transplanted to Europe.

It belongs to the genus Prunus which includes the cherry and plum, in the family Rosaceae. The peach is classified with the almond in the subgenus Amygdales, distinguished from the other subgenera by the corrugated seed shell.

Peaches and nectarines are the same species, even though they are regarded commercially as different fruits. In contrast to peach whose fruits present the characteristic fuzz on the skin nectarines is characterized by the absence of fruit skin trachoma’s (fuzz-less fruit); genetic studies suggest nectarines are produced due to a recessive allele, whereas peaches are produced from a dominant allele for fuzzy skin. China is the world's largest producer of peaches and nectarines.

The scientific name persica, along with the word "peach" itself and its cognates in many European languages, derives from an early European belief that peaches were native to Persia.

The absolute form of peach oil is obtained from the leaves of peach tree which is also named by Prunus persica. It belongs to Rosaceae family and grows up to the height of 4-10 meter. It is having a whitish flesh and yellow color fruit with the delicate aroma. The absolute oil of peach is alcohol free and containing the long lasting fragrance.

Peach trees can withstand fairly cold temperatures (about -12°F); however, hardiness is affected by the preconditioning the trees receive before being exposed to winter temperatures. If the tree is late in going into dormancy, or hardening off, it will be more susceptible to cold winter temperatures. For example, excessive levels of nitrogen fertilizers in late summer can delay the onset of dormancy and increase the tree's susceptibility to winter cold injury. If a tree is cropped too heavily, its reserves are depleted and the tree may be susceptible to winter injury.
