Ajowain Essential Oil seeds resemble caraway and taste like pepper with anise and thyme. They can be mislabeled as lovage or celery seed. Ajowan is not grown in the United States. There does seem to be an American cousin naturalized after its arrival from Asia.

The ajowain essential oil is highly used in India for flavoring and for home made medications from ancient times. It is basically used in stomach ache. It is a perfumery raw material. The ajowain essential oil is highly valued in spasmodic, carminative and a good stimulant tonic. It is extracted by the steam distillation process.

It is a small, erect, annual shrub with sift fine hairs. It has many branches of leafy stems, small feather like leaves, and 4 to 12 rays of flower heads, each bearing 6 to 16 flowers. The fruits are minute, egg shaped and grayish. Ajwain is pungent and bitter, spasmodic, germicidal, antiseptic, digestive, antipyretic, expectorant and an extra ordinary tonic. Ajwain seeds consist of moisture, protein, fat, minerals, fiber, carbohydrates, calcium, phosphorus, iron, carotene, thiamin, riboflavin and niacin.
